Some days the only thing that makes the day better is a warm cookie.
It was a rainy, dreary day here in New England. Raincoats, chilly air, weather that promises a glimpse of what is to come. I needed something to bring a smile to my face.
I bake when I need comfort. I invent random desserts from things I have in my pantry when I need comfort. Most of the time that makes for a very interesting and tasty “therapy” session.
These were no exception. I felt like I wanted oatmeal cookies but I was missing a couple of ingredients for the recipe I found. So I threw that recipe away and got to creating. These are so good. Not tooting my own horn, it’s just that they are vanishing so quickly that I’m sitting by the fridge so no one steals them.
Pomegranate Dark Chocolate Oatmeal Bars
1/2 cup softened butter
1 c. raw/turbinado sugar
1 tsp vanilla
1 1/2 c. flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 c. oats (your preference)
1 c. cranberries (I used pomegranate Craisins)
1/2 c. dark chocolate chips
8 oz. pomegranate yogurt (I used Chobani)
In a large bowl put the oats, flour, salt, baking soda, and cinnamon. Stir to combine. Add in the cranberries and chocolate chips. Mix to coat all of the ingredients.
In another bowl place the softened butter and sugar. Mix. Put in the vanilla. After cracking the eggs into a separate bowl and whisking them, combine the eggs and butter mixture together.
Mix the dry and wet ingredients. Once the mixture is combined it will be very dry. Now is the time to add in the yogurt.
Place the mixture in a greased (with cooking spray) 13 x 9 Pyrex. Bake at 350 degrees for 30 minutes.
Eat with passion.
My mouth has eaten 12 of these. Since yesterday. Seriously. Go make this.
